Spinach Nargessi is one of the delicious Iranian dishes, whose origin goes back to the Northern regions of the country. It’s is called Nargessi— which means Narcissus in Persian-- due to its resemblance to the Narcissus flower, greenness of the spinach and the yellowness of the egg. This dish is made in different areas of Iran with slight differences. For example, in the North, they add some sour orange juice, or in Northwest region like city of Urmia, they add salt. Spinach Nargessi, is a healthy, nutritious, delicious and inexpensive food.

Directions
  • Cooking the Spinach

    Wash the spinach and chop it coarsely. Then fry in a pan with low heat until cooked and its juice runs out.

  • Frying the onion

    Dice the onion and sauté in a pan with some oil until the color turns golden. Then add turmeric, black pepper, then crushed garlic and fry until the aroma of garlic is released. Now add the cooked spinach to the golden onions and stir.

  • Adding the eggs

    When the spinach and onion are sautéed, add the eggs to the pan—without getting mixed with the spinach and onion-- Cover until the eggs look soft boiled. Now stir the ingredients together. Add some salt and the food is ready!

Serve the Spinach Nargessi with Sangak bread and Kefir/Labneh.

1. To garnish, add some chopped walnuts on it.

2. Garlic is optional; it adds a very delicious taste to it.
